Chocolate Protein Bark

INGREDIENTS:

½ cup coconut oil
½ cup cocoa powder
½ cup rice malt syrup
1 teaspoon vanilla extract
1 cup macadamias or nut of choice
2 scoops protein powder

METHOD:

  • Mix together coconut oil, cocoa powder, rice malt syrup and vanilla extract in a saucepan on medium heat until combined.
  • Let the mixture cool down until room temperature, stirring occasionally, then add the chocolate protein powder.
  • Pour mixture onto a baking tray lined with baking paper and add macadamias on top.
  • Place in the freezer for about 30 mins or until hardened then break apart and serve.
